Halloween has always been one of my favorite holidays to decorate for. For me, it marks the end of summer and ignites my holiday spirit! A few years ago, I came across this “Gingerdead Man” cookie cutter on Amazon. The recipe is a traditional gingerbread cookie, providing all the flavors of fall spices. Stamping the dough with the skeleton imprint adds a fun twist on what has usually been a cookie reserved for Christmas!
I have always followed the recipe included with the cookie cutter because there has been no shortage of positive feedback. If you have a favorite family recipe, I am sure that these cookies would turn out just as great! Like any cookie, start by combining wet and dry ingredients separately. Gently incorporate both together at the end. Stamping the dough is where it gets messy. I highly recommend refrigerating the dough after you have rolled it out and dusting with a good amount of flour before stamping. Refrigeration keeps the dough firm enough to handle, while the flour prevents the stamp from sticking to the dough.
After letting these guys cool completely, it is time to add in the “bones” with royal icing. Anytime I need royal icing, I use this recipe from Sally’s Baking Recipes. I had some leftover dough which I loaded into my cookie press to create some fun snack size pumpkins. Separate out some of the royal icing and incorporate food dye to decorate the pumpkins! I made these a day in advance of a family dinner party and placed them on the table to pass around at dessert time.
