Pop-Tarts have been on my list of nostalgic childhood treats to recreate at home and I thought Valentine’s day would be the perfect time. Whether or not you celebrate this holiday, everyone loves being surprised with a homemade treat. I have already given mine away and I loved seeing how excited everyone was over these pastries!
There are three components you will need to build the Pop-Tarts: a compote, a dough, and a batch of royal icing. I started by simmering fresh blueberries and strawberries with sugar on the stove for thirty minutes. They will reduce down to make a thick sauce perfect for that “Wild Berry Pop-Tart” taste.
For the dough, I used this recipe from Bravetart. I put all the ingredients into my KitchenAid mixer and let it do the work. Next, I rolled out the dough and used a pizza cutter to get clean rectangles. I aimed for each rectangle to be 3 inches wide and 4 inches long. I did this because I purchased small treat boxes, so I needed the Pop-Tarts to fit inside of them!
Once you have the rectangles cut out, add a spoonful of the compote to half of the rectangles. Leave some room at the edges to seal the dough together. Place the remaining rectangles on top and gently press out any air. To get fun crimped edges, use a fork along the edges to seal the two rectangles together. I brushed each pastry with an egg wash so that they came out of the oven with that pretty golden sheen!
I used the same royal icing recipe from my Halloween cookies. I didn’t use anything fancy to frost them! Using the back of a spoon, I spread the icing over the top of a completely cooled Pop-Tart. To make the Wild Berry design I just drizzled a bit of blue frosting over top of a dried layer of purple icing! I picked up some cute treat boxes from Target and used a cocktail napkin to wrap up the treats!
